How Do I Hide Certain Information On Facebook From Certain Friends?

Hello!
One of my family members has added me on Facebook and I'd rather them not see a lot of my profile.
How do I hide my information (relationships, interested in, etc.) from just specifically THEM?
I've followed the Facebook instructions, but I can't find where I can type in the name of the person I don't want to see the information.
